Organization

Shlap Muan is a Cambodian chicken wing restaurant in North Long Beach, California, opened in 2020 by Hawk and Sophia Tea.[1][2] Its name means "chicken wings" in Khmer.[1] The wings are cooked with Cambodian-style spices and house-made sauces, and the menu also carries Khmer Chinese dishes.[3][1] Hawk Tea made the wings a tribute to his parents and to their Cambodian heritage.[1]

Food

The house special is the Dirty Elvis: wings tossed in a very hot wok, glazed in a sticky soy caramel with dried chiles, and finished with green onion and chiles soaked in fish sauce.[1] Other flavors include orange habanero, jalapeño MSG, Tamarind Tiger, Water Buffalo and the spicy Cambodian Dirt.[1][2] From the Khmer Chinese side come pork broth noodles, shrimp fried rice and garlic noodles.[1][3] Meal packs serve groups of three to about ten, and the restaurant caters parties and office events.[3][2]

History

The Long Beach restaurant opened in 2020 as a counter-service shop in a tiny space with a handful of tables, in Remco Plaza on East South Street.[1][4] By 2024 it also had a location in Pasadena and a Sunday stall at Smorgasburg.[1] As of 2026 its second restaurant was at 1108 South 5th Avenue in Monrovia.[4][5] The restaurant calls itself the "1st Khmer Chicken Wings," and says the San Francisco Chronicle voted it one of the top fried chicken spots.[3][6]

Shlap Muan has been written about or recommended by Eater staff and by the writers Nikko Duren, Garrett Snyder, Brant Cox, Jean Trinh and Brian Addison.[1]
