A MA Chicken Rice is a Cambodian-owned restaurant in Redmond, Washington, serving Hainanese chicken rice and Cambodian noodle soups.[1][2] It is a small restaurant near Redmond Town Center, with a short menu of chicken rice plates and noodle soups.[3][2]

History

The owners draw on Cambodian family restaurant, catering and deli traditions, including a restaurant on Pub Street in Siem Reap, Cambodia.[1]

Food

The menu centers on Hainanese chicken rice. It comes as classic poached chicken, crispy fried chicken, or a combo plate with both.[3][2] The chicken is laid over rice cooked with ginger. It comes with a lightly peppered broth, pickled vegetables and small dishes of sauces, among them sweet chili and a fermented soybean sauce with herbs.[2][3]

The Cambodian side of the menu is built on noodle soups: kuy teav, Phnom Penh noodle soup and rice noodle soup. The Phnom Penh noodle soup is made with a pork-bone broth and assorted meats, including liver and heart.[3] Two dishes joined the menu in early 2025. The ā mā Beef Loc Lac is stir-fried beef served with rice and a fried egg. The ā mā Dried Noodles are a spicy bowl topped with ground pork, dried shrimp and crispy fried chicken.[4] Thai iced tea is served, and the restaurant also caters outside events.[2][1]
